There are too many non-negotiables on both sides. Invite her to go to Mass with you and explain what's going on. Have conversations about your different faiths and expectations for raising a family. Do a little research about what Mormons teach and discuss it with her respectfully. In fact a lot of the people I went to synagogue with (and in my own family) had a christian parent. I think probably for orthodox jews there might be an issue, but that's a different conversation.
